One of my pet peeves is wasted food. I have lots of little tricks to avoid it — things like keeping scraps of meat/cheese/veggies in the fridge to put in egg muffins for quick breakfasts, randomly pickling stuff, and freezing everything from leftover fruit for smoothies to day old coffee (in cubes — great in iced coffee drinks).
But fresh herbs are a toughie. I’ve tried various methods of freezing them, with no luck. The only solution I’ve found is to use them up while they’re good.
So I was a little miffed when we got a giant bunch of flat leaf parsley in the organic CSA we signed up for this summer. I do enjoy getting creative in the kitchen, though, so I found a recipe online to try out — Parsley Soup from All Recipes UK.
And it was fantastic! Delicate, herbacious, and fresh tasting.
I don’t usually post recipes on here, but I had to share it for others who share my excess parsley predicament. As usual, I did make a few changes — I only had one potato on hand, and had to add garlic for obvious reasons — so my version is below. For the original, go here.
Parsley Soup — adapted from the original recipe on All Recipes UK.
Makes about 24 oz. (4 servings). Preparation time: 10 m. prep, 15 m. cooking/blending.
1 tbsp butter
1 tbsp extra virgin olive oil (evoo)
1 potato, peeled & sliced
1 large bunch fresh parsley, washed & chopped
1 L water
2 tsp chicken Better than Bouillon (or 2 chicken stock cubes)
Heat the butter & evoo on medium heat in a medium-large pot. (I used my #24 Le Creuset cast iron pot — 4.5 Q.) Add the potatoes and a little S&P* & cook 5-10 m., stirring occasionally, until lightly browned. Add parsley, water & Better than Bouillon, and a little more S&P. Stir well. Bring to a boil, then reduce heat and simmer 5-10 m. Remove from heat. S&P to taste if needed. Puree in batches. (I used my Vitamix — you could also use an immersion blender.)
Serve immediately, and enjoy a vitamin-packed, green taste of summer!
*Blue Apron has taught me to always S&P as you go, in layers, while cooking — it really makes a difference!
